I’m back with another recipe from my recipe files. I hope you enjoy this one too.  This time I’m going to share with you my Easy Chicken Biryani.  I make it all the time for dinner and people always love it.  The best part is it’s healthy and tastes delicious!

Chicken Biryani is a staple Indian dish, and is a comfort food for many people. It consists of rice, chicken, spices, and vegetables mixed together and cooked in a pressure cooker. You can make this dish to go with any meat, or even just to have for dinner.

Biryani is a popular Indian dish, and you can find it in all kinds of forms. But just because it’s delicious and easy to make, it doesn’t mean you should stop experimenting. We’ve come up with the recipe for our simple, delicious, Indian-style Chicken Biryani, which we hope you’ll find as easy to prepare as we do!

Growing up, chicken biryani was one of my favorite Indian foods. I used to order it from Take It because it had everything I needed in one package. We’ve transformed a traditional high-carb dish into a low-carb Biryani with Chicken is simple to make.. We use cauliflower rice as the base, but retain all of the flavors and textures found in a restaurant-style chicken biryani!

What Can You Make Low-Carb Rice With?

That one, I’m sure you already know the answer to – cauliflower! I was initially sceptical. Because I grew up in an Indian household, chicken biryani and rice were frequently on the menu. And, while I thought nothing could ever taste as amazing as chicken biryani now that I’m on the keto diet, I was mistaken!! While this dish will never be able to compete with authentic chicken biryani, it gets close and is really tasty! The main difference is that cauliflower replaces genuine rice as a low-carb rice substitute. Give it a shot and let us know how it goes!

Low Carb Indian Recipes Have Been Obsessed With Me!

Easy Chicken Biryani

Served with riced cauliflower and cilantro, a spicy Indian chicken dish.

  • In a medium bowl, whisk together the yogurt, garlic, 12 tsp salt, spices, and lemon juice. Add the chicken cubes, cover, and set aside for 2 to 24 hours to marinate.

  • In a large skillet over medium-high heat, melt 2 tablespoons butter, then add half of the chicken. Cook, rotating regularly, until browned, about 5 minutes. Remove the chicken to a platter and repeat with the entire chicken, adding more butter if needed. Remove the chicken from the skillet and place it in a basin.

  • Reduce the heat to medium-low and add another 2 tablespoons of butter. Cook, turning occasionally, until the sliced onions are very soft and slightly caramelized, about 10 minutes.

  • Melt the remaining butter (2 tablespoons), then add the jalapeno (if using) and cauliflower rice, seasoning with the remaining salt. Cook, stirring constantly, for about 5-7 minutes, or until cauliflower rice is soft and liquid has evaporated. 

  • Combine the chicken and fresh cilantro in the skillet and cook for 2 minutes, or until the chicken is cooked through.

  • Serve immediately with a fresh cilantro garnish. Enjoy!

  • <b>Note:</b> The chicken on it’s own is also a great recipe to meal prep and add to salads or quickly cook up another side of veggies for lunch/dinner if you don’t want to make the entire recipe!
