To Make the Crust

Preheat the oven to 350 degrees Fahrenheit. Coconut oil should be used to grease a 9-inch pie dish.

In a large pot over medium-high heat, combine the walnut mixture, pears, coconut sugar, and cornstarch mixture, stirring constantly for about 10 minutes, or until the mixture begins to boil. Continue to boil and whisk for an additional 1-2 minutes, or until the mixture darkens and thickens. Pour the mixture over the pie crust and use the back of a spoon to level it out evenly.

If desired, decorate the top of the pie with walnut halves.

Refrigerate the pie overnight to allow the flavors to meld and the pie to firm.

Leftovers should be kept in the refrigerator.
